If you’re going to be celebrating for hours, like on New Year’s Eve, consider serving a few lighter drinks. This Kiwi Lillet gimlet is less intoxicating than a more potent cocktail, and can be prepared by the pitcher, so guests can easily serve themselves from the bar or banquet table.
Kiwi Lillet Gimlet
Serves: 8 – 10 Prep: Allow at least 2 hours for freezing the kiwi slices
Ingredients
- 2 kiwis, peeled and sliced
- 4 cups Lillet blonde
- 1/2 cup club soda
- 1/4 cup gin
- fresh mint leaves
- 2 cups of ice
Directions: Freeze the sliced kiwi in a single layer on a sheet pan, lined with parchment paper. In the pitcher, combine the Lillet, club soda, gin and min. Add the frozen kiwis and 2 cups of ice. Stir to combine. Serve in highball glasses, and garnish with fresh mint leaves, if desired.
