Try this fabulously tropical colada recipe as the mocktail of choice for your next summery event. This smooth, ice-blended drink with rich coconut milk and frozen bananas is popular with all of our friends!
Coconut-Banana Colada Mocktail
Serves: 4 Prep: 10 min, plus time to freeze bananas
Ingredients
- 2 ripe bananas, peeled quartered and frozen
- 1 cup canned crushed pineapple in juice
- 1 cup canned cream of coconut
- 2 cups of ice cubes
- 1 lime, halved
- 1/4 cup shredded coconut, toasted, for garnish (optional)
Directions: Place the frozen bananas and pineapple in a blender, and puree until smooth. Add the cream of coconut, 2 cups of ice cubes and the juice of half the lime. Blend until smooth and frothy.
Thinly slice the remaining lime in half. Pour the colada into glasses. Garnish with lime slices and toasted coconut, if desired.
